With social distancing and the Covid-19, making it impossible to step out of the house, we would suggest save up on the leftover meals. Do not send them to the trash bin. We agree, eating the same food consecutively for few days can get boring. There are ways in which you can turn leftovers into exciting new meals. Chef Sagar Bajaj shows us how to turn leftover mac and cheese into delicious buns.
Mac and Cheese Buns
8-10 mini dinner rolls
2 tsp Butter
3 spring onions, finely chopped
2 cups Mac and Cheese (left over)
2 tsp Peri Peri sauce or powder
100 grams of salad leafs (rockets preferred)
6-7 Cherry tomato, quarters
2 tsp lemon juice
Salt and pepper as per taste
1 tsp Olive oil
4-5 Olives, sliced
1 tbsp Mayonnaise
3 cloves Garlic, crushed
In a heated pan, pour mac and cheese, add peri peri sauce/powder, spring onions and let it thicken a little on medium flame. Once done, let the mixture cool for a while.
Split open dinner rolls and toast both side by applying some butter.
Get a small mixing bowl add rocket leafs, olives and cherry tomatoes.
Toss together with Mayonnaise, garlic and olive oil. Mix everything together gently.
Add Salt and black pepper, per taste.
Put this mixture on dinner rolls, along with a spoon of mac and cheese over the salad mix.
Stuff it evenly so the mixture does not pop out.
The whole process will take you 15 minutes flat. Now plate it up nicely with your favourite dip and enjoy!!
