As a chef, who can bake many more exotic dishes, I always find myself going back to these muffins. They taste exactly as my mom’s did...and take away all my worries, leaving me feeling relaxed and happy.”
Mom’s Chocolate Muffins
560gms flour, 150gms cocoa powder, 5 tsp baking powder, 1 tsp baking soda, 500gms sugar, 600ml milk, 120gms melted butter, 120ml oil, 4 tsp coffee powder, 2 tsp vanilla essence, 2 cups chocolate chips, 4 eggs,1 tsp salt.
Mix flour, cocoa powder, coffee powder, salt, baking soda and baking powder in a bowl. In a separate bowl, beat the eggs, vanilla essence, and sugar till the mixture is light and fluffy. Add the oil and mix till it emulsifies. Now, slowly sieve in the previously mixed dry ingredients into this batter, stirring well. Once the mixture is ready, slowly pour in the milk while stirring, and mix thoroughly. For the final step, add melted butter and stir the mixture gently with your spatula. Then add the chocolate chips. Line the muffin tray and pour the batter into each mould. Bake at 170°C for 20-25 minutes (depending on your oven). Once done, drizzle with Nutella or chocolate ganache and enjoy.
