So, if you want to kickstart your day on a healthy note, here's her favourite vegan recipe that is super-easy and delicious!
Vegan Lentil Soup
¼ cup extra virgin olive oil
1 medium yellow or white onion, chopped
2 carrots, peeled and chopped
4 garlic cloves, pressed or minced
2 teaspoons ground cumin
1 teaspoon curry powder
½ teaspoon dried thyme
1 large can (28 ounces) diced tomatoes, lightly drained
1 cup brown or green lentils, picked over and rinsed
4 cups vegetable broth
2 cups water
1 teaspoon salt, more to taste
Pinch of red pepper flakes
Freshly ground black pepper, to taste
1 cup chopped fresh collard greens or kale, tough ribs removed
1 to 2 tablespoons lemon juice (½ to 1medium lemon), to taste
Method
It’s easy!
First, add olive oil and sauté the onions, garlic, wait till it turns red! Add diced tomatoes, carrots, celery to it!
Let it heat Nd sauté for 5-6 mins and then add grounded cumin, curry powder. Mix them well
Next, add the rest of the ingredients EXCEPT for the spinach and lemon juice. Simmer for about 30 minutes until the soup is thickened and the lentils tender.
Stir in the spinach, lemon juice and season with salt to taste, black pepper and pinch of red pepper flakes and garnish it with fresh kale!
For a thinner soup, simply add more water or vegetable broth.
Enjoy the vegan lentil soup with some fresh, crusty bread if desired or even with some brown rice.
