
Mondays are usually packed with loads of work. So sweating it out in the kitchen, to cook a hearty meal is the last thing you want to do. For days when you are running short on time, one-pot dishes are what you need. Not only are they easy to make but also do not require piles of pots and pans to wash when you are done cooking. Life is hectic, putting together a meal doesn't have to. Here's an easy yet delicious recipe for busy Mondays.

Ingredients for Pho stock
1kg chicken bones
0.3gm (roasted) ginger
1kg (roasted) onions
4ltr water
40gm cinnamon sticks
40gm star anise
20gm black pepper
20gm cardamom black
Salt ( as per taste )
1tsp sugar
1tsp white pepper
1tsp fish sauce
Method
1) Boil the chicken bones and all the ingredients mentioned above for 1 hour. After which strain them and keep it aside. This will be the basic stock for the soup
Ingredients for accompaniment
10no basil
5gm beans sprouts
2no red chillies
2no lemon wedges
10gm Sriracha Chilli sauce
5gm Hoi sin sauce
30gm soaked rice noodles
20gm sliced onions
1tbsp chopped spring onion
1tbsp chopped coriander
A pinchful of pepper
Chicken/vegetables of your choice (boiled)
Method
1. Make an accompaniment plate, while keeping all the ingredients separately, which are basil, beans sprout, red chilli, lemon wedges, Sriracha sauce, and hoisin sauce.
2. Boil the rice noodle & put it into a soup bowl.
3. Place the sliced chicken and vegetables in the pan over the rice noodles.
4. Add sliced onions, coriander & spring onion over the vegetables/chicken.
5. Heat the pho stock & check the and pour the stock over the chicken and vegetable and serve hot with accompaniments on the side.
