It’s hard to argue against the fact that when it comes to eating out, being “served” has more meanings than just one. It’s not only about culinary excellence anymore, but also about the experience—from the ambience and table setting to minute attention to detail when it comes to interiors and hospitality. The Oberoi, Gurgaon’s newest restaurant, Madam Chow, adds to this list of places that are raising the bar for eating out. Think: the sweet scent of jasmine tea, the musical sound of sizzling woks, the warmth of light bouncing off glass walls, and a reflection pool for a romantic setting. Madam Chow offers this and more. Officially opened on August 29, 2025, it aims to celebrate the bold flavours of Guangdong and Sichuan cuisine, known for their contrast of tastes that travel from spice-heavy to laced with sweet notes.


The space itself lends itself to an Instagram-first experience. Picture this: a glass pavilion floating above The Oberoi’s signature blue pool, with seating that flows from cosy clusters to an elevated mezzanine view. The interiors play with contrasts too (it’s a running theme across the space)—sunlight filtering through suspended ceramic tiles by day, and moody shadows gliding over stone and wood by night. The play of materials is intentional. By the time dinner rolls around, it transforms into an intimate, glowing cocoon that practically begs for long, indulgent meals.

Behind the scenes, Chef Wong Kwai Wah (Sam) and Chef Mark Lin both craft a menu that balances authenticity with palate-forward, modern-day eats. Chef Sam, with over three decades of experience, offers dishes like Imperial Roasted Chicken, Xiang La Tofu, and Zhenglong Whole Silver Pomfret that engage with diverse notes from spice to silkiness. Chef Mark, meanwhile, turns dim sum (a must-have) into edible poetry—his Lychee Bonsai Bao, Harmony Siu Mai, and Ocean Silk Cheong Fun will make you stop mid-conversation just to stare (and snap).


Desserts get their moment too—think Jasmine Tea Mai Lai Go (Chinese tea culture is a constant inspiration) and Sichuan Peppercorn Ice Cream that’ll have your taste buds buzzing in the best way. And if you’re into cocktails, opt for Madam’s Favourite, Pearl of Fire, or Jade Hue—they’re as pretty as they are potent. The drinks menu also packs an impressive line-up of Chinese teas, quality sakes, and international wines for when you’re feeling fancy. The best part? The energy. There’s something electric about watching chefs at the open kitchen, feeling the warmth of the space, and catching the shimmer of the reflection pool after dark. Every detail—from the lighting to the service—is fine-tuned to create a dining experience that feels sensual, sophisticated, and just the right amount of dramatic.
