
The terms “healthy” and “dessert” can co-exist in the same sentence. Not all desserts are sinfully rich in sugar and high on calories. There are a few made with superfoods, which pare down on added sugar yet taste delightful. Ramit Kohli, Executive Sous Chef, Taj City Centre Gurugram, shares recipes of yummy desserts that cut back on sugar and carbs. Make these and keep them handy for the sweet cravings or follow up your weeknight dinner with one of these.
Orange and Mint Delight
Ingredients
1/2 tea spoon lemon juice
120 ml white wine
10 grams sugar free
2 tablespoons cognac
3 egg whites
150 ml whipped cream
2 oranges
2 mint sprig
Method:
Mix sugar free, lemon juice and wine. Stir in the Cognac and set aside.
Beat the egg white until stiff; gradually fold into the above made mixture. Now beat the cream until stiff and fold in the mixture.
Rinse the orange in hot water, wipe and keep the zest aside. Remove the orange segments from the skin and chop the pulp into pieces. Chop the mint leaves.
Now fold the orange pieces, zest and mint into the cream and pour the mixture in a glass garnished with fresh mint leaves, chill and serve.
Ingredients
50g White butter (unsalted)
100g Brown Sugar
1tsp Vanilla Extract
2tbsp Cocoa powder
1/4 cup Chocolate chips
2 cups Puffed Rice - 2 cups
200g Almond sliced
100g Pistachio
Method:
Take butter, brown sugar in a sauce pan and heat till the sugar melts.
Now add in vanilla, cocoa powder and chocolate chips and mix well.
Add in puffed rice, sliced almonds and mix well.
Spoon it into parchment lined pan and spread evenly.
Separately blanch pistachio and peel the skin off and slice it roughly.
Now top the above made mixture with sliced pistachio.
Chill for an hour.
Cut it into bars
Ingredients:
1/4 cup chia seeds
1 cup almond milk
2 tea spoon honey
1 tea spoon vanilla extract
A pinch kosher salt
10g Sliced almonds
10g Papaya sliced
2 nos. strawberry
5g Butter (salt less)
Method:
Combine chia seeds, almond milk (at room temperature), honey, vanilla extract and salt.
Cover and refrigerate for 3 hours.
Take it out and mix well till the mixture gets thick.
Now separately melt butter in a non-stick pan and caramelise sliced strawberry and papaya with its natural sugar content. Add in almonds and cook for another minute.
Take it off fire.
Pour chilled chia seed mixture in a bowl and garnish with hot caramelised strawberry, papaya and almonds.
