From the puffed-up magic of a Dutch baby pancake to the delicate charm of French crêpe suzette and the bite-sized buttery goodness of Russian blinis, these recipes are perfect for every occasion. Whether it’s a casual breakfast or a show-stopping dessert, pancakes and crêpes can transform any meal into something extraordinary. The best part? They’re easier to make than you think. French crêpe suzette

Ingredients  

Crêpes

2 large eggs  
3/4 cup all-purpose flour  
1/2 cup whole milk  
1/2 tsp sugar  
1/8 tsp kosher salt  
1/3 cup cold water  
1 tbsp canola oil  
1 tbsp unsalted butter (melted, plus extra for the skillet)  

Orange-butter sauce  

1/2 cup unsalted butter (softened)  
1/3 cup + 2 tbsp sugar  
1/2 tbsp orange zest  
1/3 cup fresh orange juice  

Method  

In a bowl, whisk together the eggs, flour, milk, sugar, and salt until smooth. Gradually add the water, oil, and melted butter. Heat a skillet over medium-high heat, brush with butter, and pour in 3 tablespoons of batter, swirling to coat the surface. Cook for 45 seconds until the edges brown, flip, and cook for another 10–15 seconds. Repeat with the remaining batter to make 10 crêpes. For the sauce, blend the butter, sugar, and orange zest. Slowly add the orange juice while mixing. Cook the mixture in a skillet until syrupy, about 5 minutes. Dip the crêpes in the sauce, fold into quarters, and sprinkle with sugar. Serve immediately.  

Dutch baby pancake

Ingredients 

1/2 cup all-purpose flour  
1/2 cup whole milk  
2 large eggs  
2 tbsp sugar  
1 tsp vanilla extract  
1/2 tsp kosher salt  
2 tbsp unsalted butter  
Powdered sugar, syrup, or jam for serving  

Method  

Blend the flour, milk, eggs, sugar, vanilla, and salt until smooth, then let the mixture rest for 20 minutes. Preheat the oven to 425°F (220°C) with a skillet inside. Once the skillet is hot, carefully remove it, add butter, and swirl to coat. Pour the batter into the skillet and bake for 15–20 minutes until puffed and golden. Dust with powdered sugar, slice, and serve immediately with your favourite toppings.  

Russian blinis  

Ingredients  

1 cup all-purpose flour  
3/4 tsp salt  
1/2 tsp baking powder  
3/4 cup + 2 tbsp milk  
1 large egg  
1 tbsp melted unsalted butter  
1 tbsp unsalted butter for cooking  

Method  

Whisk together the flour, salt, and baking powder. In a separate bowl, mix the milk, egg, and melted butter. Combine the wet and dry ingredients to form a smooth batter. Heat a skillet over medium-low heat, brush with butter, and drop batter by the tablespoon. Cook until bubbles form, about 1–2 minutes, then flip and cook until golden. Repeat with the remaining batter. Serve warm with your choice of toppings.
