
Turkish Eggs on Toast
Ingredients
1 cup hung curd/Greek yoghurt
1 tsp garlic paste
2 cloves sliced garlic
1 tsp Tahina (sesame paste )
1 tbsp dill finely chopped
1 tbsp extra virgin olive oil
1 tbsp cooking olive oil
3 tbsp salted butter
½ tsp chilli flakes/smoked paprika
2 eggs (as fresh as possible)
Salt to taste
2 slices toast
1 tbsp vinegar
1 cup of water
Method
Put the greek yoghurt in a large bowl and whisk in the garlic, tahina, dill, extra virgin olive oil, garlic paste and some seasoning. Leave on the side while you prep the rest of the ingredients.
Heat the butter and cooking olive oil in a small pan until melted, stir in the chilli flakes, sliced garlic and leave over low heat. Poach the eggs by gently cracking into a pan of just simmering water with vinegar. Leave for 3 minutes. Now, put the hung curd mixture on the toasts and top up with a spoon of chilli butter on the toasts.
Take the eggs out from the water and put on the toasts. Garnish with some dill and serve!
